This bread flour is made using 100% certified organic hard red wheat and produces a great texture in your bread. Your dough will have a smooth elastic consistency due to the high protein content of hard red wheat. Since our flour is freshly milled and has not gone through natural or artificial bleaching process some people like to add 1tbsp of vital wheat gluten per cup to make a fluffier loaf. If you love a hardy loaf leave out the vital wheat gluten! Either way delicious!
